Skinny Coleslaw Recipe
1/4 Small Red Cabbage
1/2 Small Green Cabbage
1/2 Carrot, Shredded
Zest of 1/2 Lemon
1/4 Cup Lakewood Organic Lemon Juice
1/4 Cup Olive Oil
1/4 Teaspoon Black Pepper
1 Tablespoon Honey or Agave (Vegan Alternative)
1 Teaspoon Salt
Thinly slice the cabbage (removing tough outer leaves, stems and core).
Combine cabbage and all other ingredients, toss to mix well.
Serve immediately or refrigerate overnight for a more pickled flavor.
